For this ice cream, you can use raspberries, blueberries, currants, or a mix of all three. It is important to boil the berries as described in the recipe, otherwise you won't get such an intense flavour. You'll need an ice cream machine.

- 500g berries
- 200g sugar
- 475ml soured cream
- 115ml whipping cream

- Boil berries if possible without any liquid until they have all burst and released plenty of juice. Strain through a sieve. You should get about 350ml of thick berry concentrate. Allow to cool.
- Mix the berry concentrate with the sugar, then stir in the soured cream and whipping cream. Mix everything thoroughly and leave in the refrigerator for a few hours to cool down.
- Prepare the ice cream according to the instructions given by the ice cream machine's manufacturer. Store in tightly sealed container in the freezer.
