Enjoyed this recipe. The only adjustment I had to make was the cooking time of the chicken hearts because they go tough quickly. Instead of salt I would highly recommend using fish sauce. YUM!!-25 Jun 2018

Thank you ever soo much. When I follow a recipe, I FOLLOW that recipe. If I add or subtract , then it's a whole different recipe, soo I did as this recipe said, & it was SPOT ON! Never better. I make chicken hearts a lot, in butter, or oil, like it says, but the mushrooms really added that extra great flavor. Onion is always great of course, , But this is a wonderful recipe.   • 2 Tablespoons Grapeseed Or Peanut Oil, For Frying
  • 1 pound Chicken Livers And Hearts
  • 1 cup Flour
  • 4 pinches Sea Salt
  • 4 ounces, weight Hard Cheese, Like Manchego

Preparation

When choosing chicken organs, please make sure they’re organic and from a farm you trust. Rinse them in a colander and let them dry slightly while making the dredge.

Thoroughly coat the livers and hearts in the flour mixture and spoon them onto the skillet. The oil should sizzle, but not sputter. If it is sputtering, please turn the heat down to a sizzle. Cook about 5 minutes on each side, or until browned to your liking. Let them dry on paper towels and taste before adding any extra salt.

1.5-2lb Chicken Gizzards & Hearts

Instructions:

1. Wash and clean the gizzards and hearts and cut the gizzards in half. (optional)

2. Chop the onion and saute on low heat until the onion is soft and transparent.

3. Add pressed garlic, then add the gizzards with hearts, add bay leaves and lightly season with salt and pepper. Cover with a lid and cook on very low heat until the gizzards have released it’s juices.

4. In a separate cup, dissolve 2 cubes of chicken bouillon in 1 cup of hot water (preferably boiling water) then add it to the gizzards.

5. Mix everything together very well and cook on very low heat for 60-90 minutes until most of the water has evaporated and gizzards are tender.

6. Taste while cooking, season with more salt and pepper if needed.

Cleaning: Mushrooms absorb water like a sponge, so if you’re planning on eating them raw, don’t rinse them. Instead, use a dry paper towel to brush off any dirt. If the mushrooms are really dirty, it’s okay to wipe them off with a dampened paper towel.

If the mushrooms are being cooked, it’s okay to rinse them if they’re really dirty.

Storing: Most mushrooms will keep for about a week in the refrigerator when stored in their original packaging, or a porous paper bag.

Mushrooms tend to absorb odors from other foods, so keep them away from anything strong-smelling in your refrigerator.
