Recipe for fasting meatballs from potatoes and mushrooms

A meatball is a small ball of meat, sometimes associated with other ingredients, such as breadcrumbs, chopped onions, eggs, fat and spices. The meatballs are cooked by frying, baking or simmering, cooked in sauce. There are many types of meatballs that use different types of meat and spices or even vegetable dishes.

The old Roman cookbook "Apicius" included many meatball recipes. Some of these include spicy lamb and egg yolk and saffron. This method was brought to the West and is called "gilding". There are many regional variations among them. The best known is "kufteh Tabrizi", from the northwestern region of Iran.

This dish has a diameter of 20 centimeters, but almost the same composition as today's meatballs. Various meatball recipes can be found throughout Europe and Asia. From Iberia and Sweden to the Indian subcontinent, there is a wide variety of meatballs from the "kofta" family.

  • 700 gr fresh mushrooms
  • 2 finely chopped onions
  • 2 boiled and grated potatoes
  • 1 carrot
  • 3-4 cloves of garlic
  • biscuit
  • 3 tablespoons flour
  • 2 tablespoons chopped parsley
  • 2 tablespoons chopped dill
  • salt
  • freshly ground pepper
  • frying oil.

Method of preparation:

Wash the potatoes thoroughly and bring to a boil. Clean the mushrooms or wash them as you like, then cut them into small pieces. Peel and chop the onion. Put the carrot through the small grater. Stir in the mushrooms, add the onion and carrot and cook together until all the liquid is gone. Let them cool and grind them a little, if necessary. Peel a squash, grate it and put it on a large grater.

Mix them with the mushrooms and the rest of the ingredients, then mix the composition well. Form the balls, roll them in breadcrumbs and fry them in hot oil or put them in a baking tray. Take them out on a plate and serve them either hot or cold, with mustard, pickles, puree or a red sauce.

Recipe for fasting meatballs with potatoes and carrots. The secret is the potatoes

On fasting days you can eat good and full. You don't have to think you're going to be hungry. Just because you exclude meat, fish, dairy, and eggs from your daily diet doesn't mean you'll be hungry. With a little imagination you will make a good meal. Today I offer you a recipe for fasting meatballs with potatoes and carrots.

After you prepare them, you have two options. Either fry them or bake them in the oven. Of course, the second option is much healthier. Why? Because it does not involve oil and frying. However, in both cases, the roasts are ready when they acquire a uniform golden color. I enjoy cooking and good appetite!

The starch in potatoes is a complex carbohydrate whose digestion slowly releases carbohydrates (19 carbohydrates per 100 g) that will not lead to a sharp rise in blood sugar. The potato is a source of energy and favors the prolongation of the feeling of satiety.

A peeled potato contains 12% of the recommended daily requirement of fiber, which has the property of promoting intestinal transit.

The potato does not fatten! It contains only 85 kcal / 100 g, which is twice as many calories as other carbohydrates (bread, pies, rice).

Fasting potatoes from potatoes

Until a few days ago, I realized how often I prepare these Fasting potatoes from potatoes and yet I did not publish the recipe on the blog.
This time, if I still prepared them, I took a few pictures as long as the space allowed me to unfold, considering that for some time the house has been upside down and my master shows no signs that he would finish painting quickly…. Mdaaaa! This is another song story. I hope that by Christmas I will be able to put everything back together and have a place in the kitchen, at least.

Fasting Potato Meatballs & # 8211 Ingredients

500 g potatoes
4-5 tablespoons flour
50 ml oil
2-3 cloves garlic
1/2 bunch of green parsley
1 teaspoon sweet paprika
Vegeta Naturella (does not contain additives and preservatives)
salt if needed

Potato fasting meatballs & # 8211 Preparation

Peel the potatoes, wash and cut into cubes. Boil in water with a little natural vegetable. After boiling, drain the water and crush. Add to the mashed potatoes, oil, crushed garlic, pepper, paprika, Vegeta Naturella to taste and flour.

Stir until all ingredients are incorporated. We must obtain a composition as dense as possible. We moisten our hands with cold water and form meatballs. Fry in hot oil until nicely browned. Remove on paper napkins to drain excess oil.

Note: The formed meatballs can be given if desired through breadcrumbs and then fried in oil. If you do not want to fry them in oil, I recommend you put the meatballs in breadcrumbs and place them on a tray lined with baking paper and bake them in the oven for 30-35 minutes until they are nicely browned.

Lent mashed potatoes, can be served hot or cold, with cabbage salad, cucumber salad, pickles or ketchup and mustard.
